I was going to do a full-on Christmas poem full of wit and wisdom and a nice little tag at the end to make you smile.
However. I’m afraid I got involved in making a terrifically complicated roast goose recipe (Nigel Slater, since you ask) which took a total of three days, plus I had to clean the house so…
No Christmas poem.
The goose was absolutely wonderful, by the way - as I hate turkey, I never have one for Christmas or anything else. Goose is much more traditional, is naturally juicy and full of flavour, gives lots of good fat for roast potatoes throughout the year and the carcass makes a lovely soup. The legs can be stringy so I made a confit of the legs which was what took a lot of the time but was absolutely outstanding (pun intended).
[Sorry, vegans and vegetarians - this was a very happy goose that was free-range, organic and properly fed. Every part of the bird (or dinosaur, really) has been used.]
My two grown-up sons have just hoovered up the last of the leftovers. My daughter and her husband are arriving the day after tomorrow so all my kids will be with me - I’m looking forward to it.
